Puerto Rican Salmorejo de Jueyes is a treat for anyone who loves crab! Traditionally an all-day family affair, buying lump crab meat means you can have this hearty stew and rice on the table in about a half an hour. This comforting recipe always reminds me of my late suegro (father-in-law) who was actually my husband Hector’s maternal grandfather, Abuelo Toño. This is the person who raised Hector from the age of nine until he joined the Army at age 17. When I came home to meet Abuelo for the first time, he made Salmorejo de Jueyes. He was so excited to cook for a chef who was going to be his future daughter-in-law!
